Don’t let the word cruciferous turn you away. It’s simply a category of vegetables related to cabbage. My favorite saying, “don’t knock it til you try it”. Cruciferous broken down, simply has to do with the Latin word meaning CROSS. For if you look at a growing cabbage plant, it’s four leaves join in resemblance of a cross. It’s a big word, but it’s really that simple.
Most turn their noses away from cruciferous vegetables, some of the most healthful to eat. The cruciferous family includes: broccoli, cauliflower, kale, brussels sprouts, cabbage, bok choy, turnip greens, rutabaga, arugula, radishes, and wasabi just to name a few. It’s NOT the vegetables fault they have such a bad rap. I am willing to bet that if you have the opinion of dislike for these vegetables, then most likely you’ve not tried them…lately, and if you did try them, it was long ago AND you tried them cooked in a fashion that gives the vegetable an unsuitable texture/taste.
Cruciferous vegetables eaten regularly (at least 1-2 cups/three times a week) show GREAT health benefits. A favorite of mine, brussels sprouts, being at the top of the list. 1 cup of cooked brussels sprouts provides these percentages for your daily value: 243% vitK, 129 % vitC, 23.4%Folate, 7.9%Protein, 5.6%Calcium. Brussels sprouts provide phenomenal nutritional support which targets three main systems in your body 1. body’s detox system 2. antioxidant system & 3. inflammatory/anti-inflammatory system.
