Making a “Champagne Vinaigrette” first thing in the morning set off an inspiration to name it something entirely different. Tis where the seemingly appropriate name comes from…Mimosa Vinaigrette…I hope you enjoy it!
- 1 Tablespoon Diced Onion (I prefer to use a shallot)
- 2 teaspoons Honey
- 1/2 teaspoon Kosher Salt
- 1/4 Cup Freshly Squeezed Orange Juice
- 1/4 Cup Champagne
Stir the above ingredients together. Pour in your blender (I used a handheld blender).
- 1/2 Cup Canola Oil, or any mild flavored oil you have on hand. You don’t want the oil flavor to overpower the delicate champagne flavor
Turn your blender on and incorporate first five ingredients then slowly add (by drizzling) the canola oil. Slowly adding the oil while the other ingredients are moving creates an emulsification that shouldn’t separate.
Now your Mimosa Vinaigrette is ready to toss with your favorite salad ingredients. ENJOY 🙂
