The inspiration came last week when I was sitting at the Farmers Market with Luke while he was selling his Farm Fresh Eggs. A local farmer, Miss Ruby, always has her produce at her booth ripe and ready. She had these beautiful purple beauty bell peppers for sale, a whole basket full. I was pondering on how I could work them into my weekly sales…stuffed peppers were the result.
