I am often asked, “what is kale?”. If you’re not sure what it is, the only example I can think of to describe it to you is…do you remember going to Shoney’s or a steakhouse when you were a kid? They would garnish almost every plate with it. Kale was the curly green stuff to the side of your entree to “make your plate pretty”.
Well it’s no longer just a “play pretty”
Kale’s reputation has thankfully come a long way. Nowadays you’re probably finding it on restaurant menus here and there. It’s appearance is somewhat that of Turnip or Collard Greens, but don’t knock it til you try it!!! If you’re not a fan of turnip greens, the flavor of Kale is much more delicate and not near as bold. The smaller the leaf of Kale the more delicate in texture and flavor.
Nutritionally speaking, It’s DANG good for you! One cup of raw Kale will knock the socks off of most other vegetables.

How would I suggest eating Kale? Most every vegetable is best for you consumed in it’s raw state. And Kale is awesome in a salad flying solo OR mixed with other greens. It’s crisp and delish! I am awaiting a bottle of champagne from the liquor store delivery boy (my husband) 😉 I will later post a splendid champagne vinaigrette that’s a perfect dressing for your next kale salad. This vinaigrette and kale will be great tossed with walnuts (or nut of your choice) and berries (or craisins). Let me know how your salad turns out.
